ETOPS - COCKPIT TEMP CONTROLLER DOES NOT KEEP STABLE TEMPERATURE.  REMOVED AND REPLACED TEMP SENSOR (651HK) IAW AMM 21-63-17. OPS CHECK GOOD. AC OKAY FOR SERVICE.
